Cucumber Salad

Ready in 20 minutes

Serves 6-8


Ingredients:

4 fresh cucumbers, about 4-6” in length

1 small red onion

1-2 TBSP missBEEhaving honey; try different flavors. Some of the Queen bees favorites are Whipped Ginger Peach, Hibiscus Ginger, Harvest Spice, Let it BEE.

3-4 TBSP Apple Cider Vinegar; can use other vinegars, such as red wine, white, etc.

1 ½ tsp salt

2 TBSP fresh dill, chives, or parsley. Optional, but yummy.

Fresh cracked black pepper

 

1.       Wash cucumbers. Thinly slice by hand or using a mandolin. Sprinkle with salt and allow to sit for 15-20 minutes. Drain off water.

2.       Thinly slice red onion, by hand or using a mandolin. Add to cucumbers.

3.       Mix missBEEhaving Fiery Hot Honey, vinegar, and herbs together. Pour over cucumbers and onion. Let marinate for a few minutes, up to a few hours. It will be more “pickley” the longer it marinates.

4.       Add fresh cracked pepper right before serving.

*want more of a kick? Try adding 1/4-1/2 tsp hot pepper flakes or add 1-2 very finely chopped or very thinly sliced serrano peppers or other hot pepper.
